1. Mexican Salsa (Two Ways)
Ingredients (for both methods):

3 ripe tomatoes (firm, not watery)

Juice of 1 lime

A handful of fresh coriander

Method 1 (Fresh Salsa):

Roughly chop the tomatoes, onions, and chilies.

Add all ingredients to the blender.

Blend until chunky (not completely smooth).

Adjust with extra lime juice or salt to taste.
Method 2 (Roasted Salsa):

Roast or pan-sear tomatoes, onion, garlic, and chilies until slightly charred.

Let cool slightly, then transfer to a blender.

Add lime juice, coriander, and salt.

Blend until smooth (or leave chunky if preferred).
Serve both salsas with tortilla chips, toasted bread, or grilled meats.
2. Italian Pesto
Ingredients: 2 cups fresh basil leaves, 2 garlic cloves, ½ cup olive oil, ⅓ cup nuts (pine nuts or cashews), ½ cup grated Parmesan cheese, pinch of salt.
